Dealing With Setbacks

When I prayed this morning and asks God to give me the words to write on my site; I wasn’t expecting this. I was hoping for some cute baking analogy to compare to Christianity or salvation. But I got was something much more valuable. . . setbacks.

Everyone has experienced a day where, from a wordly perspective, you want to say, “Why did I even get up this morning?” or “I can’t do this anymore!” or “I just can’t deal with this personal pitfall, problem or person!!” Simple answer to it all: But God is in control. I know you know that already. I know that I know that already. So why are we still spazzin out? You might say, “but you don’t know what I’m going through!” Well, you don’t know what I’m going through either. Nobody fully understands anybody else’s situation exactly. Only the one who created you fully understands you. Be honest, really take time to think about this. Even if someone was there with you right now, sharing in your setback telling you their experience, even though if would provide some comfort, would it really change the fact that you still are going through it? If you have Celiac disease if you are with a friend that has it too, it won’t change the fact that you can’t eat out like everybody else. If someone has passed away or you have suffered loss or illness or a broken heart, another person can’t restore what you’ve lost. Only God can.

God, and there is only one true God, can fill your heart with so much love that setbacks can’t compare to the relationship you have with God the Father through Jesus Christ. As a child of God, when loss of love or loved ones, jobs, health, or friendships hit, we have promises directly from the Word of God that He will fill us with His peace and never leave us. It doesn’t mean that bad things won’t ever happen to us. Setbacks are a part of sin and this sin cursed world. But we, as believers, have the promise of life everlasting in Jesus Christ our Savior. Tell Him how you are feeling and what you are struggling with. Ask Him to keep your eyes fixed on Him so you can’t see all the bad things going on around you, the negativity that constantly wants to discourage you, the lies the devil tells you that you just can’t do it because you are broken, alone and a failure. All those feelings, thoughts and attitudes are just lies, Worthless, powerless, dried-up lies that have no power in the presence of Almighty God.

I saw this on Pinterest or facebook and saved it as a reminder of just some of the great promises we have as Christians in Jesus Christ. Sorry, I know it’s incredibly small but it blurs if I try to make it any bigger.

And don’t forget the biggest, best promise . . . that the Lord Jesus Christ loves you. John 3:16, Romans 8:35-39, Galations 5:6, Ephesian 2:4 and so many more.

Feel free to personal message me any prayer requests that you might have. I would love to pray for them for you. I know that I need the prayers of others for me.  If you don’t believe in Jesus Christ as your Savior from sin and hell and death, then you will not see the above promises in your life. He still is your creator, and knows you and loves you, but until you believe on Jesus Christ as your Savior you can’t have that peace and assurance that comes from a personal relationship with Him. So believe on Him today as your Savior. He will never turn anyone away that believes on Him with their heart. Acts 16:31 “Believe on the Lord Jesus Christ and thou shalt be saved.” It’s as simple as that. Don’t over think it. Don’t try to do it by being a good person or doing good things or talking to your priest, just believe on Jesus Christ alone for your salvation. He is all that you need.

Gluten-Free Banana Custard Birthday Cake

What’s been cookin’? The moistest gluten-free banana cake, filled with custard buttercream.

Each layer uses 1 1/4 cups bananas, pecans and buttermilk. The recipe comes from my Grandma Mickey’s old cookbook, which I converted into a gluten-free recipe. As you can see, I used a gluten-free buttercream, which you can find in my recipes section, to create a filling barrier. My, made from scratch, custard buttercream, using eggs for our own organic, free range chickens, gives a creamy, savory flavor to a very sweet cake.

The white buttercream border was piped using a 1M tip reverse scroll motion. Using an extra stiff buttercream, the roses and leaves show more definition and dry quickly. The custard soaked gluten-free banana cake gives the dessert extra moisture and flavor.

Super Healthy Apple Tartlets

As much as I love sweets, in truth, because of my Celiac an other factors, I can’t eat a lot of sugar. So I’ve decided to start posting what I eat every day for a sweet treat, in addition to the yummy special occasion desserts. I am not going to lie, these apple tartlets do not taste like hot out of the oven apple pie because it does not have all that sugar. But it does make a nice sweet apple treat when you just have to have something.

Some recipes say that they are healthy, or paleo or sugar-free and then they are loaded with sugar supplements like xylitol, stevia, and maple syrup. Although some of my recipes do use stevia, when I say healthy I try not to make any substitutions for all natural goodness.

To have a fully raw version of this recipe, you have to have a food dehydrator to keep the food temperature under 118 degrees. If you do not have a dehydrator, don’t worry, it won’t be raw, but cooked at a low temp in the oven it will still have great health benefits.

I am the worst at sharing recipes because I make everything by the grace of God, by throwing things togehter and it just comes out right. I can smell and taste when it’s just right, so these are approximations. Taste test as you go and add or substract a little as it fits your palete.

To make your “crust”:

Ingredients

3 cups chickpeas
1.5 large bananas
4 tsp nutmeg
1 tbs cinnamon
a dash of salt
a dash of allspice
a few drops of lemon juice

To make your filling:

Ingredients

1/2 large banana
2 green apples
cinnamon to taste
lemon juice to taste
a dash of salt

Note: for a sweeter filling use dates instead of banana. Please keep in mind that dates have a much higher sugar content than bananas.

Directions:

Blend all of the crust ingredients, adding just enough water to blend in a food processor or blender. If you are not looking to follow a raw diet, feel free to add some coconut milk instead of water. Place crust “batter” into lined cupcake tins, filling 1/2 in. or a wee bit more as it will shrink down when dried.

To make the filling, dice your apples and mix all the apple tartlet filling ingredients together. Taste to make sure that it has that great balance of tang and sweetness.

If you are dehydrating, put the crusts into the dehydrator and leave in for around 12hrs. Depending on you heat setting, check every few hrs to make sure the liners are doing ok and for crust firmness. When the crusts are no longer wet or sticky but still plyable you will want to add your apple filling and return them to the dehyrator. Once they are done, keep  them in the refridgerator as they will not be competely dried but have a “cooked” consistency. As everything is preservative free, there is not a long shelf life with the dehydrator method, so it would be a good idea to share.

If you are cooking the apple tartlets in the oven, preheat your oven at the lowest possible heat setting. Leaving your “crust” in the cupcake tin, put them in the oven and leave them in for a few hours. Check by pressing lightly on the crust surface. If you can press softly and your finger does not stick to it or go through the batter, but leaves a soft indent, then add the apple filling to the top. Your tartlets are done when the apples are soft, but not soggy.

This does take more time than a regular pie, but after making it once you will be able to put everything in the dehyrator or the oven and just walk away. The second time is always much faster than the first. I assure you, it will be worth it.

Always keep your finished product in the refrigerator as it is highly perishable. As in everything, eat these in moderation. Especially if you are not used to eating high protien, high fiber foods, these will send you running for the little boys or girls room if you try to eat a plate full in one sitting.

The key to these is to put in enough spices in as to not taste the banana. The banana is there for sweetness not for taste, otherwise all of your raw food recipes will end up tasting like banana bread.
