Gluten Free, Corn Syrup Free Caramel Corn Recipe

Here is a good little recipe for a healthy alternative to corn syrup filled caramel corn, that your family will love!

Things you will need:

7-10 cups Plain or lightly salted popcorn

1/4 tsp baking soda

1/4 tsp sea salt

1/2 cup butter or coconut oil

1 cup coconut sugar

parchment paper

cookie sheet or jelly roll pan

1 cup pecan (optional)

3 tsp cinnamon (optional)

1 tsp organic vanilla (optional)

Directions:

Preheat your oven to 250 degrees. Line a jelly roll pan or cookie sheet with parchment paper. Make or purchase 7-10 cups of lightly salted popcorn (no butter). DSC_4315

Evenly spread out your popcorn onto your parchment covered tray.

Brown your butter or melt your coconut oil over low heat. Add in your 1 cup of sugar, stirring continuously. Do not let it boil or it will burn. Just keep it over the heat long enough to dissolve the sugar into your oil of choice.

Here is the sugar that I chose to use. I like to use coconut sugar because it tastes so much like brown sugar.

Take your dissolved sugar mixture off the heat and stir in the salt, baking soda, and optional add-ins.  Feel free to be creative! Maybe add some carob chips!

Carefully pour hot mixture over popcorn and thoroughly mix until all the popcorn is well coated. Bake on 250 for 60 min. Stir every 10 – 15 min until sugar mixture has been mostly absorbed.
